This sandwich is imbued with the jaunty spirit and tangy brininess of the French traditional, salade Nicoise. Whereas there’s no tuna nor eggs right here, the mashed chickpeas present a creamy canvas for the brilliant Nicoise components, together with boiled potatoes, cucumbers, radishes, shallots and black olives.
